French Vanilla Ice Cream Recipe

This French vanilla ice cream recipe is a custard ice cream, a rich dessert well worth the effort. Its custard base is infused with two vanilla beans.


2½ C cups cream

2 C milk

2 vanilla beans

8 large egg yolks

2/3 cup sugar

1/4 teaspoon salt


  1. Warm the cream and milk in small pan until hot, but not simmering.

  2. Slit the vanilla beans lengthwise and scrape the seeds out into the milk.

  3. Remove from the fire and allow to cool.

  4. Meanwhile, whisk the egg yolks, sugar and salt until pale and thick.

  5. Pour half a cup of the hot cream and milk slowly into the egg mixture and mix well to temper the eggs.

  6. Slowly pour in the remainder of the milk and cream and mix.

  7. Return mixture to the pan. Cook until it reaches about 82 C (180F). The mixture should coat the back of a spoon and running your finger through it on the spoon should leave a line.

  8. Half fill a bowl with ice, place a smaller bowl in it and set a sieve on the smaller bowl.

  9. Strain the custard.

  10. Let cool, stirring often.

  11. Lay parchment paper or plastic wrap on surface of custard, and chill several hours or overnight.

  12. Pour in ice cream maker.
