French Vanilla Ice Cream Recipe
This French vanilla ice cream recipe is a custard ice cream, a rich dessert well worth the effort. Its custard base is infused with two vanilla beans.
2½ C cups cream
2 C milk
2 vanilla beans
8 large egg yolks
2/3 cup sugar
1/4 teaspoon salt
- Warm the cream and milk in small pan until hot, but not simmering.
- Slit the vanilla beans lengthwise and scrape the seeds out into the milk.
- Remove from the fire and allow to cool.
- Meanwhile, whisk the egg yolks, sugar and salt until pale and thick.
- Pour half a cup of the hot cream and milk slowly into the egg mixture and mix well to temper the eggs.
- Slowly pour in the remainder of the milk and cream and mix.
- Return mixture to the pan. Cook until it reaches about 82 C (180F). The mixture should coat the back of a spoon and running your finger through it on the spoon should leave a line.
- Half fill a bowl with ice, place a smaller bowl in it and set a sieve on the smaller bowl.
- Strain the custard.
- Let cool, stirring often.
- Lay parchment paper or plastic wrap on surface of custard, and chill several hours or overnight.
- Pour in ice cream maker.
