Soy Milk Ice Cream Recipe

This soy milk ice cream recipe seems like the most natural of pairings. It's an unusual edamame recipe – most of them are savoury. But since edamame are special varieties of soy beans harvested while the beans are young and green, it seems only natural to use them with soy milk in ice cream.

Edamame are available in many frozen food sections and some places even carry them fresh. This recipe, however, calls for them shelled, roasted and slightly salted.

If you can't find them already roasted and salted, toss some frozen, shelled beans with a little salt and roast them yourself, using our Roasted Edamame Recipe below.


Ingredients:

4 egg yolks
1 tsp corn starch
1 C powdered sugar
2 C soy milk
Pinch of salt
1 tsp vanilla essence


  1. Whisk egg yolks with cornstarch and powdered sugar.

  2. Add pinch of salt to soy milk.

  3. Heat soy milk in medium saucepan until warm, but not simmering.

  4. Slowly pour a cup of hot soy milk over the egg mixture, whisking eggs continuously.

  5. Add mixture to the saucepan and heat until thickened – mixture should reach 170F (76C) or coat the back of a wooden spoon.

  6. Strain mixture and allow to cool.

  7. When cool, add vanilla essence and pour into ice cream maker.


  8. Place ½ C edamame in a sealable plastic bag and crush with a mallet until only small chunks remain. Pick through the beans, removing the hulls.


  9. When ice cream maker is done churning, stir in the hulled edamame chunks.

  10. Allow to ripen in freezer for a few hours.

Roasted Edamame Recipe



Ingredients:

1 10 oz package of frozen or fresh shelled edamame
1 tsp olive oil
½ tsp kosher salt


  1. Preheat oven to 400F.

  2. In a bowl, toss edamame with olive oil and salt.

  3. Arrange beans in single layer in a shallow baking pan.

  4. Roast for between 10-15 minutes, turning them several times during the process to prevent their burning.


To make a savory snack instead of using the beans in our soy milk ice cream recipe, add spices of your choice when tossing the beans with the oil and salt. Some suggestions: chili, black pepper, onion powder, curry.
