White Chocolate Ice Cream

Here's a luscious white chocolate ice cream recipe that's also deliciously simple to make.

4 egg yolks

1 ½ C of heavy cream

1 ½ C of milk

1 tsp of vanilla extract

1/3 C of sugar

7 ounces of high-quality white chocolate, chopped

  1. Beat the eggs and sugar until white and frothy.

  2. Warm the milk, but do not simmer.

  3. Pour half a cup of the warm milk into the egg mixture, mix well and slowly add the rest of the milk.

  4. Return mixture to pot and cook until it becomes thick enough to coat the back of a spoon. When it is ready, you should be able to run your finger down the back of the spoon and the line should stay there. Do not let the mixture simmer, or it will curdle.

  5. Remove from fire and stir in chopped chocolate. Mix well until chocolate melts.

  6. Add vanilla essence.

  7. Refrigerate custard several hours until well chilled.

  8. When custard is chilled, add cream and mix well.

  9. Pour into ice cream maker.
